With Golem, you're stuck in a small room, and you actually have to dodge. With Plantera, you just have to circle her and move around an arena in her second phase. You can literally just make a tunnel and fly away from her. Both bosses can be shredded easily with the correct gear and weapons, but when you actually take the time to fight them, Golem is harder.
But I'd say Moon Lord and the mechanical bosses are the hardest hardmode bosses due to how unfair their attacks are. They're not made with precise dodging in mind. Moon lord is straight up undodgeable if you activate his eye lasers wrong.

I misread. The easiest is probably Plantera since melee shreds her, but I guess Skeletron prime would be easier with other ranged classes due to his patterns being easy.
Honestly, I find Duke Fishron to be the easiest boss for its tier. I tend to shred him. Empress of light would be the same if I learned her patterns, but Duke is easier to learn.
