Grey cannot be saturated as it is devoid of colour. Think of it as that you can't add colour to a b&w image by turning up the saturation. The colour information isnt there to add.
If we are talking digital art, then yes, you can increase the saturation a bit and hue shift it. You can also hue shift pure grays (saturation = 0), but it won't make any visual difference.
