So far I have one inspired thing for the HW side game, that being characters that have a similar appearance to Hollow Knight characters

Twisted Metal. Pure and simple.

I like the bullet hells from Undertale and Deltarune but I would put my own twist on it

Terraria, Minecraft, no man’s sky, hollow knight and such.

I’d basically create Miitopia again but with bullet hell attacks.

Undertale, more specifically the idea of morality, giving the player the decision between wiping the world clean or saving it. But of course, the question of morality would be put more complex than "kill is bad, save is good". Would you save a person who would probably kill an entire town afterwards despite your kindness? Something along those lines.
