Metroid Dread is a pretty brutal game compared with previous Metroid games. But most (if not all) attacks are avoidable. Once you notice the patterns and see how to avoid them, then the fights will get easier each time.
This is me in literally any game I play. I get destroyed by a boss/Dungeon, and eventually I decide to try something really stupid and it works.
Notable examples are:
Beating Hornet 2 with a summoner build, and I got her after she got me
Gentle Slope Cave, where I just took Golurk for a walk to the stairs
I also find it pretty difficult, most of its bigger projectiles can be hit with free aim, but when it sends out a huge volley, you should dodge the fireballs while shooting the rest of the projectiles to replenish health and ammo.
It's second phase is a bit tougher, but you can shoot the bouncy projectile. Try spamming the Beam, Missiles are stronger, but the Beam is only really limited by input speed, often making it preferable over Missiles. (But remember that most bosses can't be hit with the Beam, that hint should help more with the projectiles)
