It's currently not possible to place accessories on mannequins. I'd love to see this become possible at some point, because right now it's impossible to fully display certain armour sets, such as the Expert mode developer sets - most of which come with wings. There's also matching wings for many hardmode armor sets that I'd love to be able to display on the same mannequin as the armor itself (the endgame fragment wings, for example, or putting Spooky Wings on the Spooky Wood Armor).

Wigs, not wings. As in, give your mannequins the desired hairdo like you do with your character.
