You can insta-kill plant enemies by destroying their root blocks. LAME. All you need is a Pickaxe and some guts and they're hardly a problem at all. If you're packing explosives, it's even worse. So, what's my solution to this problem? Instead of vanishing into thin air, they get decapitated, and their disembodied head tries to kill you. 
So much more fun.

Lunges and snaps at the player.
New Stats:
30 Damage (+5)
6 Defense (-4)

42 Damage (+6)

Follows the Mimic movement style.
Lunges and snaps at the player.
New Stats:
115 Damage (+15)
18 Defense (-12)

(Decapitated) Clinger
Starts falling and spinning, then abruptly rockets towards the player with Cursed rocket flames.
Lands and follows the Mimic movement style, except it uses extra long Cursed rocket lunges.
These rocket lunges take the place of the long jump in the Mimic movement pattern.
Cursed rocket lunges will always inflict Cursed Inferno for 7 seconds on hit.
New Stats:
80 Damage (+10)
18 Defense (-12)

(Decapitated) Giant Fungi Bulb
Falls and rolls like a Boulder until hitting a wall.
Stops and continues firing mushroom spores in the air afterwards.
Stats While Rolling:
160 Damage
0 Defense
New Stats:
60 Contact damage (-10)
28 Defense (+8)
Spores do the same damage.
Not a plant enemy, but still...
("Decapitated") Spike Ball
Falls and rolls like a Boulder.
Bounces off a wall once before being destroyed.
50 Damage while rolling.
