This is because the game counts how many corrupted blocks there are, which includes the crimson/corruption thorns, and then compaires it to how many total blocks there are, without includeing any thorns. This means it is possible to have 108% crimson/corruption if you have, for example, 100 crimstone blocks + 8 crimson thorns and no other blocks. Here is a video about it:
Specifically, it compares the number of all corrupt/crimson/hallow blocks to all *solid* blocks. It just happens that the only corrupt/crimson/hallow blocks that are not solid are thorns at the moment.
