It is possible to get some Lunar Events gear to destroy the Empress of Light and make the boss fight easy, so to combat this, make the Empress of Light a required boss before the Lunar Events, so it would be difficult and harder

No, unrequired bosses are fine. Many of the post-Plantera bosses or events, or Solar Eclipse and Queen Slime are not required because they can be hard, but provide the player with good loot. Newer players can skip them if they wish.

Also, If you make every boss and event required, then progression becomes repetitive and bland and the game loses replayability. Optional bosses give the player choice and variety in progression.

Anyway, if you use lunar pillar weapons to kill Empress, then you’ve passed the utility for her drops anyway and it doesn’t do much for you.

Yeah but the Terraprisma is more powerful than the stardust dragon, and using the stardust dragon makes killing the empress of light in the day time a breeze
 
The Terraprisma may not have as much DPS as the dragon, but it is ultimately better since it combines the high damage of the dragon with the almost perfect precision of the stardust cells. Also, it won't fly off to attack a random enemy three screens away when you're overwhelmed by a literal horde of baddies. And it also synergizes better with stardust armor (with the dragon, you want to use the firecracker, but stardust guardian will eat up the charges with his fast but weak attacks; with terraprisma, both the minions and the guardian will equally enjoy the dark harvest-kaleidoscope combo. This is more of an "endgame convenience" argument since if you get stardust armor you already have completed the progression, but still, something that should be noted imo).
