Well your in luck! I’ve created this post to solve all those problems!
(If this has been suggested before, please don’t yell at me.)

Introducing, the Gem Lakes!
A new Mini Biome that’s located at the Cavern Layer!

Now, I’m not talking about the shrinky dinky Gemstone Caves

Now, this isn’t a bad start. I’m not dunking on it for no reason. But we can do better.

First, let’s replace all the stone around the cavity with gem blocks 3 deep. They’re obviously randomized by power (i.e. topaz is most common and diamond is rarest)

Second, we add lake to it. This is the only biome in which you are able to get a Jewlfish from the Angler quests. This means you can’t get the Juulfish from cavern ponds any more. Have I said Jewelphish enough?

Finally, we add a new crate! These would be an upgrade from the gold crate, and only fishable here in the cave. They would be rarer than the golden crates (obviously) but they also give more rewards! With guaranteed gems!

These would follow the same rules as the ores, however. You have a higher chance of getting

(Sprite yet to be made. Other rewards yet to be determined.)
