Years ago I collected them all but haven’t played in a while so I’m sure I don’t have them all now. It was quite difficult to do.
Edit: I like the ones that were inspired by Dali…I think persistency of eyes and something else maybe.

Collecting everything doesn't usually cross my mind unless I'm trying to do something very specific. 
I guess I'll eventually have to, since I'm trying to 99.9% item my Journey Mode Character, but I wasn't really considering the Paintings in any way that was special, up and until I discovered the two [or more] Don't Starve Paintings [that are super creepy]!
