Pretty straightforward, signs can't be edited or changed. Crafting a new sign and placing it, selecting edit and typing anything will not load in any text. Trying to use an old sign to add or delete text has the same result of being unable to edit it. Editing chest names still works like normal though.

Also applies to tombstones.
