I don't understand why the Zenith can't be obtained in the switch version, but all the materials can be. If there is something stopping it, what?

Switch is not updated to 1.4 PC equivalent

I suggest looking at the wiki to find what is and isn’t on your console.

Not all versions have the same content. As of now, only Mobile and PC contain items such as the Zenith. The devs are currently working on simultaneously bringing 1.4 content to consoles at around the same time. A quick gamepedia search would’ve solved your question.
However, some platforms won’t get updates, like the Wii U, PS3 and Xbox 360 versions, which are stuck on 1.2.
