You need to beat a boss to get him to show up with a NORMAL dye item.

Strange Plants, however, are an exception. If you have one, he'll show up without killing a boss.

All you had to do is hit "R" again while falling as soon as you saw that you weren't gliding or flying lol. AFAIK, you can just re-mount in mid-air? Pretty sure I've done that.

I forgot that my wings were unequipped. I didn't know I was going to shatter into a thousand pieces when I landed.

Sure, all you have to do is hit R, if you remember that you're not wearing wings.
I've got the same problem. I never take off my wings except when fighting the moon lord, so sometimes, after the moon lord is slain, I let myself fall to the ground knowing that I'll land safely anyway... and, like Crimso, ending up realizing I forgot something.
