Both of the Cavern wizards, TIm and Rune Wizards are really cool. Unique spawn conditions, pretty good armour for early mages and sick vanity all in one. You even get an achievement for Tim. I also find it amusing that Rune deals a truckload of contact damage (400!) when that's practically never going to happen.

The extremely cute flinx found in snow biome.

Fun fact: flinx can never spawn on snow nor ice, you can only find it spawning on slush or ores.

All the Ghoul variants. The light show they put on in the Underground Desert is astounding, especially if you can get the Crimson/Corruption and Hallow Underground Deserts to overlap.
