Do items despawn?

I have almost 1300 hours on this game on steam alone, but after all the years of playing, I don't know if or how items despawn. Anyone?

Some disintegrate in lava, and if you leave the world they will despawn... I think...

As far I understand. There's an item cap of 1000 (I think ?). If an item drops over that cap. The earliest dropped item will disappear.
This includes coins.

So if I drop an item, it would just stay there until I left the world or the cap was reached?

The cap for dropped items is 400. Once there are 400 items on the ground, the oldest items start being removed by the newer items. You're unlikely to hit the cap outside of an invasion, Solar Eclipse or Moon event.
If you're playing single player, all dropped items are cleared upon save and quit. In multiplayer, all dropped items are removed when the server/host quits.
Lava destroys all items with a grey or white rarity. (A few items with white rarity are an exception and can survive a lava bath.)

Wjat about when I die on hardcore mode. So I just lost everything permanently cuz it was first time I died. F uck this game I had a legendary zenith.

No, they will fall down indefinitely, provided you happen to find a spot that does not contain any blocks in the 40 block wide border outside the accessible area of the world
