Either that, or completely jump him when had just spawned with a Butcher's Chainsaw.
Believe me, I've killed even an Expert Mode Destroyer in less than a second if you catch him when he had just spawned. Like all worm enemies, he spawns curled up in a ball.
Mind you, it's unlikely you'll have either of these items (Rainbow Gun and Butcher's Chainsaw) when you can fight him.
