I personally have not be a fan of making one jungle arena for Plantera, and then only using it once. Here are a couple ideas to spawn Plantera where I want.
1) Plantera Seeds: Beating Plantera would drop maybe one or two Plantera Seeds. They can be planted on jungle grass in the underground jungle so the player can choose where they can refight Plantera.
2) Plantera Pots: Using hallowed bars, mech boss souls, or other similar hardmode materials, the player can craft special pots that can be used on Plantera bulbs to either pick up the bulb and plant it somewhere else, or use the pot with the bulb as a Plantera spawner where the player chooses.
