I don't agree with that because then people will be asking for something beyond that... and then beyond that... and then beyond that... (Repeat as many times as needed until point is more than proven)

Yeah, at some point you just have to stop and decide "Alright, this is the definitive final boss of the game."

Keep in mind that Terraria already feels like its progression is more enjoyable than like 90% of other games on the market and has the best replay value I've ever seen in a game. I think its at a good spot right now with Moon Lord being the final boss.
If you really want more to beat, challenge yourself with different weapons, different environments or download some mods.
