As much as I'd like to agree with you, Slave Knight Gael has him beat 10 times over.

It depends.
Slave Knight has many stages, so by the end of the fight you are already tired of fighting him, and only in the last stage can he be considered more difficult.
Atorias is fought in a smaller arena and he's a lot more nimble, making it difficult to get out of the way of many of his attacks, most of which can two or three shot you.

I suppose. I don't think it's the stages of Gael that bothers me, it's the health pool. The only thing about Artorias was his three hit slam, which I struggled to dodge.

I felt like it was the length of the fight that made Gael difficult because there is more time for you to make mistakes.
