what map size are you running? sometimes the temple is kinda far down, check the caverns all the way down to hell. what was kinda rare for me was further up, just below underground but I've only seen that on small maps
you can stack water candle and battle potion with journey mode spawn rates, that gets kinda crazy. also if I remember correctly jungle biomes have increased spawn rates so you can just add some temple bricks and have even more mobs spawn ^^
about the encumbering stone, I would love a filter in journey mode that only picks up stuff I haven't researched yet. that way I could blast through the map with my drill containment unit while landscaping for some project and not be paranoid I'm missing something ^^
