Some people just like watching or playing alongside the YouTuber. I usually watch games that interest me, but don't have time to play due to already having a mountain of games to play. Some watch purely for the commentary or just to keep as background noise.

Another reason is to compare how they did with another or to see what their run was like in the case of games with roguelike elements or many endings. Some watch competitive gameplay akin to how people watch traditional sports, some watch just to interact with a community that gathers around a certain game or player.
