You have until like, 200 items are loose on the ground or something, or exiting the map (if single player) to pick them up, from everything I know.
Items in the game don't disappear based on Time, but rather how many dropped items are in the World at any one time.
Exiting the game will make it that you will lose those items if they are not picked up or put in a chest. According to the Wiki here. That limit is around 400 items before items will be lost that are on the ground.
