I think you should be able to eat vile and vicious mushrooms, but eating them poisons you. Eating a vicious mushroom gives you a debuff called "Vicious deterioration" that quickly wares down your health bar until death. Eating vile mushrooms gives you a debuff called "Vile deterioration" which does that same thing, but slightly slower. I know there isn't really much of a use in this but it would make sense, according to Terraria logic.

Yeah, there isn't much of a use to it. Time spent doing things that wouldn't have a use could be better spent doing things that do have a use. E.g. your Hallowed Mushroom suggestion.
