While minecarts should be a purely aesthetic choice at this stage, there are still 3 minecarts that provide some bonuses such as glowing, 7 second lava resistance, and not slowing down in water.
The best solution would be to add three more cart upgrades (hydrodynamic wheels, fireproof paint and minecart lamp) that would allow us to upgrade minecarts and choose them based on their appearance only.
 
Why not just have one kit that does this instead of three? Perhaps combining all three of these karts into a single kit using the tinkerer’s workshop could work?

Using each upgrade separately allows you to activate a new option that is available on each minecart. These would be single-use items, just like the Mechanical Cart Upgrade.
 
Mechanical Minecart+Demonic Hellcart+Minecarp+Mushroom Minecart+Diamond Minecart+Meowmere Minecart+Terra fart kart+Minecart=The Fart Kart Finale
Goes at 250 MPH
Gives the buffs of all minecarts above
Does 100 damage when ramming into enemies
Ignores I frames
Summons the carts used to craft it to ram into enemies
(this is a joke idea)

Nah, make minecart vanity slots and one that combines the ability of the three

Previously, the Mechanical Cart was the best cart in the game, so players asked for a social slot for new carts. The developers decided to make the Mechanical Cart a cosmetic cart instead and added the Minecart Upgrade Kit.
So now, instead of creating a super cart and then adding a vanity cart slot, let's just add another Upgrade Kits.

Fireproof Paint
“Funded by the Tax Collector” (mastodon suggested)
Provides 7 seconds of Lava Immunity On minecarts
found in Shadow Chests and Hell Crates 19/100 paired with the Demonic Hellcart


Minecart Lamp
“Powered By Fireflies”
Illuminates the area around the Minecart when consumed
Sold by the demoltionjst when you have any Minecart for 10 Gold

Allows Digging With Any Minecart
sold By The demolitionist for 30 gold when you have the digging Molecart equipped
