The building bug has struck me

Here's a current build I'm working on

I've run into a bit of a roadblock though. I know I can't dye everything grey and white or the fortress is going to be really boring. I experimented with some painting and I can't seem to find a paint that isn't too obnoxious and gives just the right amount of color while maintaining the low saturation I desire. What would you do to add some color to it?

Got it, i've been on reddit too much...
 
I think you can dye everything white and gray, so long as the room shapes are interesting, the backgrounds are well-textured, and- most importantly- you have highlights that break up the color here and there. The faded brown of wood is enough if you're going for a realistic style, or something vibrant like bright red banners if you want to go more high fantasy.
