Depends what you want
If you want an infi-flight mount
The get the broom or the baby Duke mount
If you want fast land speed
Then get the mourning wood mount
Or the ancient horn for the double jump

then there is santank mount

My world is in Master Mode, so that won't be an issue.

Gelatinous Pillion. The thing is thrown at you pre mech, and is way faster both horizontally and vertically than any of the wings of its tier and until post Plantera. It can use any of the double jump accessories to make its air game even more ridiculous. I’ll even use it into endgame because it falls so quickly you can use it as a downward dash.
