Here are my suggestions:
1. An achievement for making a full set of every armor
2. An achievement for killing each boss
3. An achievement for getting each available NPCs
4. Finishing waves (Such as Frost/Pumpkin Moon, Goblin Army, Pirate Invasion and blood moon)
5. For finding the lost girl
6. Digging to hell
7. Killing one of each monster in the game
8. Discovering new biomes
9. Playing with friends
10. Making the world 100% Hallow/Chrimson/Corrupt

I'll be general for most as they're basically the same with varying entities:

Gotta Catch 'Em All - Have one of each type of bug in your inventory.
[X] neighbor has moved in.
Place a full set of [X] armor on an armor stand.
Place a(n) [X] banner. (Instead of simply obtaining them.)
Place a(n) [X] trophy. (Instead of simply obtaining them.)
Acquire a(n) [X] rarity item.
Killed the Clothier.
Killed the Guide.
Defeat the pirate invasion at spawn without any NPCs perishing.

I also haven't noticed difficulty achievements so:
Slay the Wall of Flesh in Hardcore.
Slay X in Hardcore. X = each official boss (excludes King Slime)
