Bosses lower, but do not entirely prevent, the rate of enemies spawning.
You could try building your arena a little bit off the ground. This will prevent enemies from jumping into your arena and keep them on the ground away from you. If the edges of your arena remain on screen, enemies will not spawn in it. You could also try a statue hooked to a timer to spawn enemies, filling the cap on the number of enemies on screen.
If you're playing Journey mode, there's an enemy spawn rate slider you can manipulate to lower spawns.
