This is my second suggestion and I hope this one goes as good as the first :)

Stats:

AI Type: Kingron/Boss

Health: 20000

Damage: Roars: 50
Melee: 1st form 85, 2nd form: 100
Smash: 40, 2nd form: 90
Defence: 1st form: 20
2nd form: 30
2nd form, Speed, and Damage increase, also Spawns Pigrons around him and visual appearance changes

Spawns: Naturally after defeating all mech bosses
or summoned with Suspicious looking Truffle

Drops: Pigron Scales 30-100 Glowing Mushroom 50-75
Pigron Core (100%) Bacon Thrower (25%, there you go @Baconfry)
Pigsaw (12.34%) Greater Healing Potion 10-20 (100%) Pigron Wings (23.8%)
Kingron Trophy (10%), Kingron Mask (14.25%)

New Items!
Pigron Core: used to craft Pigron Armor and Pigron Sword
Suspicious looking mushroom: uncommon (24.6%) chance of dropping from

This has some flaws:
♦ You did not specify what are his attack petterns except for "roar" and "spawns pigrons"
♦ The pickaxe is useless just like the Titanium/Adamantite pickaxe/drills are, it will just be skipped and never used.
♦ What about the Bacon Gun? It shoots bacon thats for sure, but at what rate? Is the bacon just a projectile like an arrow from a bow? Any special properties?
♦ Why does it drop hellstone ore? By the time you defeat 3 mechs hellstone is like rare dirt to the player...

What does kingron do? Is he like fishron? I noticed you said you changed it but I don't see anything new.
 
This seems like a pretty swaggy idea. Only problem is that the Suspicious Looking Mushroom might be hard to get. Maybe craft if from a bunch of various shrooms and souls?
