Mimics drop between 45 and 55 Gold coins. I'm fairly certain this is a bug and they're only meant to drop about ten, but I could be wrong. (This bug may have been fixed in 1.4.0.4, I haven't encountered a mimic there yet.)
 
So, this isn't actually a bug.

Terraria has a "random" money drop booster effect that is rolled every single time you fight an enemy. (This is not a new thing, its been there for a while!)

Every enemy has a base quantity of money, and then it gets rolled through the multiplier, and then you get that much money.

Mimics drop so much that the amount you actually get may seem dramatically higher than expected.
