How to get rid of them statistics thing at the side?

if you're talking about the cell phone (the stuff on the side below the map)
what you can do is go into your inventory, and go below the map and look at the icons for it
click on those to choose which ones you want for it to show.

F7 didn't work. it just turned my computer's volume down.

Did you try holding the function (FN) key while pressing F7?

There's also a fullscreen stat overlay. F8 does the trick for that one. I accidentally opened it during a frost moon! This thread got me close to the answer, and a guess closed the deal.
