How about... killing King Slime with a Shortsword!? Actually, this one's perfect! It's an early-game challenge only skilled players can beat. (No limits on Armor, Accessories, Health, or what Shortsword you use)

the achievements should be interesting not "do X 1000 times" that's just tedious it needs to be something challenging like defeating the dungeon guardian or something
Plus - will there be in-game rewards or do you just get bragging rights ?

To continue our ongoing efforts to add community suggestions to the game we would like to start taking suggestions for achievements for the new achievement system that will be in the 1.3 PC update! A few of the areas you can think about while submitting your suggestions are; completing events, fishing, crafting, collecting, surviving, etc.

DIAMONDS!! - Get a diamond.
Highway to Hell - Get from the overworld to the underworld in less than 30 seconds.
Fullmetal Alchemist - Craft an Ironskin Potion

Slayer, kill 100 enemies without dying.
Killing spree, kill 250 enemies without dying.
Unstoppable, 500 enemies
Untouchable, 1000 enemies
Invincible, 5000 enemies

Waste of copper, craft a copper shortsword
Eat lead, kill any boss using only a minishark or megashark
